Potato Salad

Cutting up potatoes and greens
Cut up two pounds (1 kg) of red, white, and blue potatoes
Put them in water and boil for 8 minutes.
dice 2 small sticks of celery, about 1/2 cup
slice & dice 1/2 small red onion aiming for 1/2 cup
chop up 1/4 cup of chives

Mixing The Dressing
mix together, separately from the potatoes
2 teaspoons of dry mustard
1 gloppy tablespoon of Dijon mustard
1/2 teaspoon of celery seed
1/2 teaspoon of white pepper
Toscana white wine vinegar, scant 1/4 cup.
and mayonnaise, the real kind, about 1/2 cup?
one eighth cup sweet pickle relish (Heinz) (optional)

Creation
Mix the greens with the potatoes in a large bowl
pour the dressing over the mixed greens and potatoes
stir it all up, but not too much.

Rest
Refrigerate for at least an hour.
