Oven Fried potatoes

Peeling and Slicing
Peel three russet brown potatoes
Slice each potato into 8 or 10 lengthwise wedges.
If you want shorter fries, take the potatoes back
and exchange them for shorter ones.
Failing that, cut the wedges in half.

Oven-ing
Move oven rack to bottom of oven. (if necessary)
Set the oven to 450 F to pre-heat.

Soaking and drying
Soak sliced potatoes in HOT water for 10 minutes
Spread four (4) tablespoons of oil
on heavy-duty baking sheet
Sprinkle salt (optional) and pepper on the sheet.
Dry the potato wedges with paper towels.
Toss your future oven fries in a dry bowl together with one (1) tablespoon of oil.
Spread the potato wedges on the sheet.
Cover the whole sheet with aluminum foil

Baking
Set the oven to 475 F because 450 F was not the correct temperature.
Pretty close, though!

Bake for 5 minutes on bottom oven rack
Remove foil, bake 10 more minutes
Rotate tray, bake 5 to 10 more minutes
Take the tray out and turn all the potato wedges over
Bake for 15 more minutes to brown the other sides.
